It is richer in color, in amplitude and in complexity than the regular Gamay, because of the lack of sulfur allowed for the yeasts to ferment and express themselves. It is a true exceptional wine. Its aromas are marked by black fruits: blackberry, blackcurrant, black cherry and red fruits: strawberry and raspberry.
It’s the wine of joy, of pleasure, of retrieved nature and of course of celebration.
Grape category
This cuvee is issued from Gamay parcels, planted between 1967 and 1978. Average returns are between 40 and 45 hl/ha
Soil
The soil is of ‘Perruches’ style, meaning it is constituted offlint of clay with more or less sand or gravels. The Domain is located on the most elevated point, between North Loire and South Cher.
Vinification
The harvest is entirely done by hand with a lot of care. After a severe selection, the grapes are disposed in small baskets, before being taken to the cellar where they are emptied one by one into stainless steel containers. The grapes are intact and the fermentation happens completely naturally and the transformation of grape juice in wine happens inside each grape and without any yeast addition and above all without any sulfur, element however essential in the elaboration and conservation of the wine.
This approach is spectacular but nonetheless risky as in principle it is impossible to do wine without protecting it.
Hence, all is done in the outmost respect of nature and the bottling is realized in March, after the cold wave, following very strict hygene conditions.
